Peanut butter cookies are the ones I make most at home, simply because it’s quick, easy and delicious, and my spouse loves it too. These vegan peanut butter cookies are also very quick and easy, gluten free and absolutely delicious. They are packed with dark chocolate chips and shredded coconut, which both make the cookies fragrant and yummy.

If you like peanut butter, you’re going to LOVE these vegan peanut butter cookies. You will only need one bowl and a spatula to make them, and it can also be a fun activity to do with kids on a free afternoon.

Vegan Peanut Butter Cookies with Chocolate Chips and Coconut

For the cookies:

  • 200 grams (3/4 cup) smooth peanut butter
  • 150 grams (3/4 cup) sugar
  • 30 ml. (2 tbsp.) water
  • 1/2 tsp. baking soda
  • Pinch of salt
  • 150 grams dark chocolate chips
  • 30 grams (1/3 cup) shredded coconut
  • 30 grams (1/3 cup) chopped peanuts
  1. Preheat oven to 160c degrees.
  2. In a bowl put peanut butter, sugar and water and mix together into a smooth mixture.
  3. Add in baking soda, salt, chocolate chips, coconut and chopped peanuts and stir well until incorporated and slightly sticky.

  4. Form small balls with your hands (wet them first to make it easier) and place on an oven pan lined with baking paper.
  5. Flatten the cookies slightly with your hands.
  6. Bake the cookies for about 13-16 minutes or until they are golden and set on the sides but still slightly soft in the center.
  7. Cool completely and serve.
  • Keep the cookies in a sealed container for up to a week.
  • Instead of coconut you can use almond meal.
